![]() Today we are baking a simple but tasty Orzo♥Coffee cake. This is a very simply cake but it is its simplicity that makes it a great everyday treat! Click on Read more to follow the recipe ... ![]() First of all, the ingredients needed: 300 gr of organic self-raising flour 150 gr of organic sugar 100 gr of organic butter (you could also use margarine) 1/2 tsp of baking soda 2 organic free range eggs 200 ml of strong freshly brewed Orzo♥Coffee 50 gr of organic chopped mixed nuts Some icing sugar for decoration. Ready to bake![]() ♥ Preheat the oven to 180C/gas 4 ♥First prepare a nice strong brew of Orzo♥Coffee, so it will have time to cool down. I have used 40 gr (3 tablespoons) of Orzo♥Coffee for 250 ml of hot water in my cafetiere (you should get around 200 ml of actual Orzo♥Coffee).Leave it to brew for more than 5 minutes. ![]() ♥ While your Orzo♥Coffee is brewing, place the butter in a little bowl and melt it using the microwave at low setting. ♥ Mix the 2 eggs and sugar together in a large bowl. Whisk them until they become spongy and fluffy. Add the melted butter (making sure it has cooled down a bit) and mix again until well incorporated. ![]() ♥ Add your brewed Orzo♥Coffee (again make sure it has cooled down a bit) , the sieved flour and finally the baking soda. ♥Mix everything together making sure you have a nice uniform and soft mix ![]() ♥ Finally add to the mixed chopped nuts and integrate them in the mixture with a spoon. ♥ Pour the mix into a cake tin - a round 20cm diameter would do. I used my favourite heart shaped one. ![]() ♥ Place in the over at 180C/gas 4 for 40 minutes and live in the oven 5 minutes more when you switch it off to cool down slowly. ![]() ♥ You can decorate the cake simply dusting some icing sugar (like we did) or if you want to make it even more elaborate you can make some butter icing or use some marzipan. ♥ Enjoy with a nice cup of freshly brewed Orzo♥Coffee
