On Saturday I baked my favourite biscuits ... Orzo♥Biscotti. Use organic ingredients if you can ... your biscotti will taste even better :-) Click on Read more to follow the recipe ... Ingredients: 35 gr of Orzo♥Coffee (organic ground roasted barley) 120 gr of almonds 200 gr of plain flour 1 and 1/2 tsp of baking powder a pinch of salt 75 gr of unsalted butter cut in little cubes 150 gr of caster sugar 2 eggs 25 ml of strong brewed Orzo♥Coffee 1 tsp of cinnamon 1 tsp of demerara sugar Let's start! ♥ Preheat the oven to 180C/Gas 4. ♥ While the oven reaches temperature prepare a small strong cup Orzo♥Coffee and leave to rest. ♥ Layer the almond on a baking sheet and place in the hot oven to roast for 10 minutes. Remove and leave them to cool. Leave the oven on a lower temperature while you prepare the biscuits. ♥ Sift the flour, salt and baking power in a large bowl. Place the butter in the bowl and rub in with the ingredients (like you would do for a crumble). Stir in also the caster sugar and Orzo♥Coffee ♥ Time to go back to our almonds. Place them on a chopping board. Use a big knife or if you have it a 'Mezzaluna' knife to chop the almonds. It is fine if the chopped almonds result in a mix of smaller and bigger chunks. ♥ Add the chopped almonds to the large bowls with the rest of the dry ingredients ♥ Beat in a smaller bowl the two eggs ♥ Fold the beaten eggs into the dry ingredients. ♥ Fold also the brewed Orzo♥Coffee (just enough to make a fairly firm dough) ♥ Knead the dough for two minutes on a surface with flour until smooth. ♥ Shape the dough in two rolls about 5 centimetres in diameter. ♥ Dust the two rolls with the demerara sugar and cinnamon ♥ Place in a grease-proof sheet and place in the oven (at 180C/ Gas 4) for 20 minutes ♥ After the 20 minutes, take the rolls out and place them on a chopping board / hard surface and using a sharp long knife cut the dough in 3cm slices. ♥ Place the cut slices on some oven paper or directly into the wires/shelf and return them in the oven for other 10 minutes or until slightly browned. ♥ After 10 minutes take out of the oven your biscotti and place them on a cool wire rack to cool down. ♥ After 30 minutes your Orzo♥Biscotti will be ready to serve and enjoy. Crispy and delicious!
