This is the perfect start of the day! Full of energy and with a lime twist. You can make muffins with the same recipe but we decided instead to make a cake. Hope you enjoy it as much as we did here at Orzo♥Coffee house. Ingredients: 225 gr of unsalted butter or margarine (left to soften) 200 gr of caster sugar 4 free range eggs 2 limes (zest and juice) 4 tbsp of Orzo♥Coffee Pronto 250 gr of self-raising flour 1 tsp of baking power 1 tbsp of Orzo♥Coffee Original Some icing sugar for dusting Let's get started A little preparation before we start. ♥ Put the kettle on and add 50ml of hot water to the 4 tbsp of Orzo♥Coffee Pronto and let it dissolve ♥ Wash your limes (brushing them if necessary so they are ready to be used) ♥ Turn the oven on at 180 C Prepare the limes: ♥ Firstly zest your limes finely ♥ Squeeze the juice from the limes in a separate container We have everything ready now to get started on the cake! Place the soft butter or margarine in a bowl, add the caster sugar and beat until soft and smooth. Add the 4 eggs and beat everything together. Once the mix is smooth and fluffy you can add the flour and lime juice. You can now add the lime zest, the concentrate orzo coffee you prepared earlier and lastly the baking power and a tablespoon of orzo coffee original (this is optional but gives the sponge a little bit of crunch). Your mix is now ready to be put into a cake tin. I used an heart shape one, but of course a traditional round cake tin or even two small loaf tins, would be fine. You could also use the mix to make individual muffins (probably around 12-15). Put in the hot oven for 45 minutes (check after 40 minutes with a wooden stick to make sure the mix is completely dry before turning off the oven) Time to enjoy a slice of your Lime and Orzo♥Coffee cake. It is nice warm and perfect with a Orzo♥Coffee cappucino.
