Happy Mother's Day
To celebrate mother's day we made some lovely barley bodgers and filled them with Orzo♥cream ...
Bake some of these biscuits for your mum ... she surely will love them!
For the biscuits
225 gr of plain flour
175 gr of unsalted butter
130 gr of caster sugar
1 egg yolk
4 teaspoons of Orzo♥Coffee Pronto
For the cream
50 gr of unsalted butter
90 gr of icing sugar
1 tablespoon of Orzo♥Coffee Pronto dissolved into 10ml of water
Put the flour and butter in a bowl (or in a food processor) and mix until it looks like breadcrumbs.
Add in the yolk and sugar and continue to mix, until it forms a dough.
Place the dough on a floured surface and knead until uniform and smooth.
Prepare a ball, wrap it in transparent film and place in the fridge for at least 30 minutes.
Prepare the oven and heat it up to 180 C/ Gas 4.
While you wait for the dough to cool, prepare yourself a nice cup of Orzo♥Coffee!
You can also prepare the Orzo♥Cream by mixing together the butter, icing sugar and dissolved Orzo♥Coffee Pronto and whisking until creamy.
Roll out the dough and cut some shapes out (we used hearts but you can also use rounds). Leave half of the biscuits as they are and for the other half find a smaller cutter (heart shaped ... to show your mum all your love) and cut out the centers of half of the biscuits.
Place the biscuits of a baking sheet and tray and cook in the oven for 12-15 minutes (until just golden). Once cooked leave them on a wire rack to cool.
Spread your Orzo♥Cream icing (we made also some green icing - using food colouring) on the whole biscuits and gently press the cut-out cookie on top, so that the cream fills the heart-shaped whole.
