It is Halloween! To celebrate this spooky day we have prepared some orzo coffee and pumpkin cupcakes (it is also vegan) ... They look scary but they are quite delicious ! Firstly, warm up the soya milk and pour it on the Orzo Coffee Originale and let it soak for 30 minutes. In the meantime, take a nice tasty pumpkin, peel the raw pumpkin, clean it from the seeds and put it in a food processor or grate it, until in uniform small pieces – use 200g; Beat together the soft brown sugar and margarine until fluffy; Add the pumpkin and ground almonds to the mix and still well in; finally sift in the flour, baking powder and spices. Lastly, add the soaked Orzo Coffee Originale. Line two cupcake pans (you will get around 24 small cupcakes) with cupcake papers and fill to just below the top. Bake at gas mark 4.5/180c/370F for about 15-20 minutes. They should be slightly golden on the top and if you insert a skew, it should come out clean. This cupcake are delicious are they are, but you can also add some orzo coffee buttercream on top. Since it is Hallowen we used this recipe in some spooky skull cupcake cases and added some green icing :-)
