Cupcakes are my favourites! It is not only the taste but the fact you can let your creativity run free when it is time to decorate them. Why not trying to make your Orzo♥Espresso cupcakes? Ingredients (makes 10-12 cupcakes) For the cupcakes 125g plain flour 145g caster sugar 1 and half tsp baking powder pinch of salt 1 egg 40g butter (soften at room temperature) 4 teaspoons of Orzo♥Coffee Pronto 70ml milk For the Orzo♥Coffee Buttercream 125g butter (soften at room temperature) 220g icing sugar 50 ml of Orzo♥Coffee espresso ♥ Preheat your oven to 180ºC/ gas mark 4 ♥ Boil your kettle to prepare a small cup of strong Orzo♥Coffee. Use 4 teaspoons of Orzo♥Coffee Pronto and 50 ml of hot water. Once ready add also the 70 ml of cold milk. ♥ In a large bowl, sift the flour, baking powder, salt, sugar and the soft butter. Mix them together with an electric whisk (but do not worry if it still very dry). ♥ Slowly combine the wet ingredients. First whisk in the eggs, then the Orzo♥Coffee with milk prepared earlier (images below) ♥ Time to spoon into a muffin tin lined with paper cases or silicone mould (like ours), making sure they are two-thirds full ♥ Bake in the oven for 20-25 minutes. Check with a skewer inserted into the cakes to make sure they are ready, it should come out clean ♥ You can enjoy your cupcakes as they are (maybe with a little icing sugar dusting) or if you want to you can make the perfect Orzo♥Coffee buttercream to complement their taste. Remember to decorate them only after they cooled down. Prepare the Orzo♥Coffee Buttercream by whisking together butter, icing sugar and slowly adding Orzo♥Coffee espresso (this can be prepared with an espresso machine or with 50ml hot water and 2 teaspoons of Orzo♥Coffee Pronto) Decorate the cupcake to your heart desire! Enjoy!
